St Andrews’ popular student lunch destination, CombiniCo., is preparing for a £1 million national expansion following a reportedly “significant” seed investment deal.
CombiniCo. opened its first location in St Andrews on South Street back in February 2018. Co-founded by former student Alex Longson and current student Juno Lee, CombiniCo. has since become one of St Andrews’ most successful student-started companies.
Although CombiniCo. has only been open for eight months, their Japanese-Korean fusion foods have already exceeded expectations, with lines often reaching the doors during the lunchtime rush.
The popularity of CombiniCo. has also attracted a “significant private investment for expansion with a company valuation in the millions.”
The expansion package outlined in CombiniCo.’s memorandum includes opening a flagship store in Edinburgh, developing a line of bottled beverage products, and launching an automated payment app as early as February 2019.
In terms of the St Andrews store, they have recently increased its opening hours to incorporate warm dinners. Additionally, there are also suggestions that CombiniCo. will open an outlet in the University Library in the near future.
