Valentine’s Jammie Dodgers

Whether you are spending Valentine’s day with a significant other or with a group of friends, these homemade jammie dodger biscuits are a foolproof way to satisfy sweet cravings and add a festive touch to the heart themed holiday.

The dough is incredibly simple and only requires a few ingredients that most students already have in their cupboard. To make the dough, you need:
250 grams of butter, cut into cubes
200 grams of caster sugar (plus, a bit extra to sprinkle on top before baking)
360 grams of plain flour
A pinch of salt
2 teaspoons of vanilla extract

  • First, using a wooden spoon or a whisk, combine the butter and sugar until smooth
  • Next, add the flour, salt and vanilla extract and combine
  • (It might look like there is too much flour but when you knead the dough it should all combine nicely)
  • Knead the dough on a clean, dry surface that has been dusted with flour
  • Wrap your dough in cling film and place in the fridge for 30 minutes
  • While the dough is chilling, heat your oven to 170 degrees
  • Once the dough is chilled you can roll it to about a ½ centimetre thickness
  • Use a small glass or cookie cutter to cut out the biscuit halves (I found small heart cookie cutters at the Cook Central store on Church Street but Amazon Prime also has tons of options that would be delivered in time for Valentine’s day)
  • Place the biscuits on a lined baking tray and sprinkle with caster sugar
  • Bake for 13 minutes or until golden brown
  • Once the biscuits have cooled, spread raspberry jam in between the halves and enjoy!
