Now that Fresher’s Week has ended and some of you might be regretting some of the not-so-healthy choices that were made, I am here to provide you with a choice that by no means feels healthy at all, but really is. I know that most people might be repulsed by the idea of eating black beans in their brownies, but in almost every test case that I have performed, the majority of people have had no idea that they were in fact eating delicious black beans instead of floury and sugary chocolate brownies. Having swiped this recipe from my wannabe-vegan mother, I know for a fact that it is a strong competitor with regular brownies and can definitely hold its own!

Ingredients

1 can of black beans

2 tbsp cocoa powder

1/2 cup rolled oats

1/4 tsp salt

1/3 cup agave nectar (acceptable substitutes could be maple syrup or honey)

2 tbsp sugar

1/4 cup coconut oil

2 tsp vanilla extract

1/2 tsp baking powder

2/3 cup dark chocolate chips

Method

Heat oven to 180 C and combine all ingredients in a food processor and blend until the mixture is completely smooth. Stir in the chocolate chips and pour into a 9×9 pan. Cook brownies for 15-17 minutes and let them cool until they are ready to be enjoyed!
