Baked spinach cakes with coconut-curry sauce


Serves 2

-1 bag of baby leaf spinach
-1 carrot, grated
-1 red apple, peeled and grated
-1 egg white
-Some grated cheese
-1 tsp flour
-1 can coconut cream
-1 to 2 tsp curry

-Boil the spinach until soft; chop up and add in the carrot and apple
-Mix in the egg white and flour- mix well
-Place the mixture inside single portion aluminum trays (grease them first; the cakes will come out easier that way once cooked); sprinkle with some grated cheese
-Let them cook inside a preheated oven at 180oC for half an hour
-Heat up the coconut cream with the curry inside a pan; pour on the spinach cakes once cooked

These are great with some couscous or brown rice on the side!
